You can do it traditionally then crop out the background, or find someone who can help with that.

Just bit the bullet and downloaded a new art program to try to learn... maybe I'll enter something. I don't know yet. I'm still trying to convince myself that my work even has a place alongside the stuff others make that seems a million times nicer than mine.

The face inside the mirror is what the mirror itself uses to communicate with the people who ask it questions. Think of it like being like if the mirror was Siri, but it uses a human face to reassure the person on the other end that they weren't crazy for talking to a plain mirror.
