'Central' makes sense for both protons and neutrons, yeah. Free neutrons have a decay rate of 881 seconds, apparently? (Some sources differ by 8 seconds - apparently there were a couple of differences in methodology at some point that lead to a divergence.)

And protons dont decay--at least, not in the current lifespan of the universe lol

But quarks are also fermions.
