I joined a couple dating websites recently, and specified I'm looking for people around my age, 18-25, but only people 30 and up have been messaging me. I have nothing against them, they're good people, but I don't want that much of an age gap in a relationship. I dunno what to do!?

They are adults, they can take a no and it own't kill them.

You have to track down the Tiger of Adulthood and he'll give you the location of the Jaguar of My-Joints-Hurt-Every-Morning. From there, you have to slay the Cougar of When-Did-That-Become-A-Thing.

30 isn't even close to cougar age but totally understand someone younger like you not wanting that gap.
Like everyone said your best thing is to just tell them you are not interested and leave it be.
Sadly that's what happens though when you join a dating site you'll keep people from all walks of life even if you put requirements.

To be serious for a moment, whenever I was on a dating site, in my twenties, I specifically states that I didn't wanna date anyone ten or more years older than me, and men in their 50's still messaged me on a consistent basis. People hope you'll make an exception for them, or see your picture and decide to message you based on that, and not the words that make up your profile.
