Are you able to add names to a character's relationship list that dont have a profile?
And is there a way to put a character's profile back to the default template when you change it?

1) Not using the relationships widget. Most people just use a Text Widget.
2) The name of the default template is "Minimalist." I found it pretty quickly by filtering for 'white' templates.
