I know sock monkeys were a pretty big thing in Þe Olden Days (read: not-even-very-distant past), but it has never occurred to me until this very day that I could literally just make a sock monkey and then BAM! new plushie friend! (I only had this world-shattering revelation because my friend said THEY were making one, and I went "hey I want a sock monkey! ... wait I should make one too!")
anyway, I'm excited for this new little project. I even have things like buttons, yarn, and ribbon lying around, so this monkey is going to have ✨style✨. might even make more than one. :D
I would also recommend this idea to anyone else who enjoys plushies and doing random things on a whim. (as a bonus, if you use rice instead of regular stuffing, the monkey could totally work as a heating/cooling buddy. just, y'know, make sure the rest of it is microwave safe if you plan to heat it up.)
I like the idea of a little wool rice filled plushie! Gotta do that for my nieces, these monkeys will be the ugliest little things mankind has ever seen, but that'll be so cute!

Does rice go bad or start sprouting if it gets wet? I know corn can cause issues thanks to our corn-ho bags, does rice do similar?

yeah, rice unfortunately has a tendency to grow mold if it gets wet. I don't know for sure if it can also sprout, but either way it's definitely best to avoid getting it wet.
(oh, and I think it's very sweet that you plan to make some for your nieces. :D I'm guessing they'll probably love that.)

I'm sure #1 will hit #2 with it and #2 will eat it, but it'll be cute while they last lol
