A tasty and easy crock pot recipe, I made it tonight for a family dinner and it was a hit. My parents took left overs home with them and my kid cleaned his plate. I served it with mashed potatoes, and steamed carrots and broccoli.
Ingredients
2 large pieces of pork tenderloin – preferably trimmed of fat.
2 large tart apples – I used Granny Smith
½ cup of liquid honey
½ cup of water
1 tablespoon of ground cinnamon
1 tablespoon of brown sugar
Mix honey, water, cinnamon and brown sugar together and set aside. Wash, core and thinly slice the apples. Make small cuts into the pork being careful not to slice the whole way through. Place apples into the incisions. Put pork into crock pot and pour honey mixture over the pork, and feel free to place any remaining apple slices into the pot as well. Cover and cook on high for 4 to 5 hours or until the pork is tender and begins to shred. Remove the pork from crock pot and discard juices.

I made this again today, and changed the honey to real maple syrup and ohmigosh. *Drools* it's better than before.

Interesting change. Real Maple costs $$$ here in Oz though.
