I stumbled across this nice recipe on Pinterest and gave it a try. Pretty good! As I was only cooking for two, I used four skinless/boneless chicken thighs instead of the breasts, but used the full measure of marinade but halving everything will work fine. I let the chicken marinade overnight in a mixing bowl in the refrigerator (the advantage of having the extra marinade was I could immerse the smaller chicken cuts completely). The original recipe is below.

Italian Marinated Chicken
Prep Time: 1 hr
Cook Time: 20 mins
Total Time: 1 hr 20 mins
Servings: 6


Ingredients:
  • 6 chicken breasts, trimmed
  • Easy Homemade Italian Dressing (marinade)
    • 3/4 cup olive oil
    • 1/4 cup red or white wine vinegar
    • 1 teaspoon garlic powder
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon crushed red pepper
    • 3/4 teaspoon salt
    • 1/2 teaspoon pepper
    • 1 teaspoon lemon juice

Instructions
Place your chicken breasts in a gallon Ziploc bag with all ingredients for the Easy Homemade Italian Dressing.
Seal the bag, squeezing out any excess air.
Let the chicken marinate for at least one hour and up to 12 hours.
Grill or saute your chicken depending on your preference. Instructions for both are below.

On the Grill
- Remove each chicken breast from the bag and place on a hot grill over medium heat.
- Grill 5 to 7 minutes on each side or until done. (Juices should run clear.)

On the Stove
- Add 2 tablespoons of olive oil or another cooking fat to a skillet on the stove. - Heat the oil over medium high heat. (You'll know it's ready when the chicken sizzles as you place it in the pan)
- Add each chicken breast to the skillet in a single layer.
- Cook for about 5 minutes. Flip your chicken. Cook for an additional 5 minutes. (Chicken should be firm to the touch when done and juices should run clear.)

Notes
This makes enough marinade for up to 8 chicken breasts so feel free to toss two more in the marinade if you're feeding a crowd or just meal prepping!

Honey Soy Chicken

Ingredients:
  • Salt and pepper
  • 1/4 cup (60g) flour
  • 500g / 1 lb chicken breast , boneless and skinless (2 pieces)
  • 3.5 tbsp (50g) unsalted butter (or 2 1/2 tbsp olive oil)
  • 2 garlic cloves , minced
  • 1.5 tbsp apple cider vinegar (or white or other clear vinegar)
  • 1 tbsp soy sauce (I prefer reduced salt Soy as it is sort of like liquid salt)
  • 1/3 cup (90g) honey (or maple syrup)
  • 1.5 tbsp apple cider vinegar (or white or other clear vinegar)

Instructions:
Cut the breasts in half horizontally to create 4 fillets in total.
Sprinkle each side with salt and pepper.
Place flour in a shallow dish.
Coat chicken in flour and shake off excess.
Melt most of the butter in a large skillet over high heat - hold back about 1 tsp for later.
Place chicken in skillet and cook for 2 - 3 minutes until golden.
Turn and cook the other side for 1 minute then Turn heat down some to medium high.
Make a bit of room in the pan and add garlic and top with remaining dab of butter. Stir garlic briefly once butter melts.
Add vinegar, soy sauce and honey and stir/shake pan to combine.
Bring sauce to simmer, then simmer for 1 minute or until slightly thickened.
Serve with Rice, Bok Choy, Spinach, your choice of side, etc.

Notes: it works well with thigh fillets if you wish to have smaller portions. Recipe halves well.
Spinach and Cheese Stuffed Chicken

Ingredients⁠
* 1 tbsp. Olive Oil⁠
* 1 tsp. Italian Seasoning⁠
* ½ tsp Red Pepper Flakes or to your taste⁠
* ¼ tsp Garlic Powder⁠
* ¼ tsp Onion Powder
