    Shrimp that are dipped in a scrumptious batter, rolled in coconut, fried, then baked. The dipping sauce is the clincher: marmalade, honey, hot sauce and mustard!

    Caribbean Crab Cakes Benedict
    Eggs Benedict is a breakfast indulgence, but this version is so delicious you’ll want it again and again! It’s made with fresh cooked crab cakes, made with crab caught locally every day and a hollandaise sauce that’s creamy and delectable.

    Caribbean Spiced Shrimp with Pineapple Salsa
    Shrimp that are dusted with a house blend of spices, grilled and served with cool pineapple salsa.

    Chips with Spicy Mango Salsa
    A delicious and fresh salsa made with mangoes, peaches, Serrano chilies, cilantro, garlic, lime juice and ginger root. Mango salsa may be substituted for any other house salsa.

    Jamaican Fried Dumplings
    Light and airy fried dumplings served with a cod fillet and tropical tartar sauce.

    Jerk Shrimp with Grilled Onion
    Shrimp cooked in a Jamaican Jerk Rub that’s spicy, but sweet mango and ripe avocado buffer the heat.

    Caribbean Sweet Potato Salad
    This delicious potato salad includes white potatoes as well as a bevy of other fabulous ingredients - peanuts, corn, cucumber and red onion. The dressing is oil-based with a splash of lime juice and chopped fresh cilantro.

    Tropical Salad with Pineapple Vinaigrette
    Light and refreshing salad made with salad greens, pineapple, bacon bits, macadamia nuts and toasted coconut. Toasted almonds can be substituted for macadamia nuts, if desired.

    Tropical Fruit, Avocado and Grilled Shrimp Salad
    A lovely salad made with grilled shrimp, avocados, a host of peppers and tropical fruits.

    Pit-Barbeque Pork
    A meal sized for a party, this whole-body pig has been buried and pit-roasted on applewood charcoal and a hint of mesquite chips. Seasoned with a proprietary blend of spices known only to the Head Chef, each piece of pork is juicy and delectable, meat falling off of the bone. Serving sections are ribs, flank, shoulder, or belly.
