Fair Isle is a technique that is intimidating and tough to learn even if you're a seasoned knitter. One thing about Fair Isle that many knitters dislike is the way the colors strand in the back.
In this technique, you carry the yarn along every second stitch by 'weaving' it into the working yarn, thus avoiding strands and giving a very nice finishing touch! If you want to get started with Fair Isle or you've been yearning for a better way to do this, give this video a shot.
Note: while the video shows how to work this using both continental and English style, I believe this is still useful as it can be easily modified for a one handed technique. It may just slow you down a tad.
