Bartenders are responsible for the bar. They serve drinks, keep the area clean and entertain the patrons in that area.
They are also allowed to come up with their own concoctions and accept tips.
Servers take care of the hookah tavern adjacent to bar in check, providing patrons entertainment and making sure their needs are tended to. Again, they can offer their own services and accept payment for them as they wish.
