Ingredients:
For the Crust:
2 1/2 cups all-purpose flour
1 cup unsalted butter, cold and cubed
1/4 cup granulated sugar
1/2 teaspoon salt
1/4 cup ice water
For the Filling:
1 pound ground beef or lamb
1 small onion, finely chopped
1 carrot, finely diced
1 celery stalk, finely diced
2 cloves garlic, minced
1 tablespoon tomato paste
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1/4 cup beef broth
1/2 cup frozen peas
1/2 cup shredded cheese (optional)
For the Egg Wash:
1 egg, beaten
1 tablespoon water
Instructions:
Prepare the Crust:
In a large bowl, combine flour, sugar, and salt.
Cut in the cold butter until the mixture resembles coarse crumbs.
Gradually add ice water, mixing until the dough comes together.
Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
Prepare the Filling:
In a large skillet, cook the ground meat over medium heat until browned. Drain any excess fat.
Add the onion, carrot, celery, and garlic to the skillet. Cook until the vegetables are tender.
Stir in the tomato paste, thyme, rosemary, pepper, and salt. Cook for another minute.
Add the beef broth and simmer until the mixture thickens slightly.
Stir in the peas and cook for another 2 minutes. Remove from heat and let cool slightly.
If using, mix in the shredded cheese.
Assemble the Crescent Moon Hand Pies:
Preheat the oven to 375°F (190°C).
Roll out one disc of dough on a lightly floured surface to about 1/8-inch thickness.
Use a large round cutter or a bowl to cut out circles from the dough.
Place a spoonful of the meat filling on one half of each circle.
Fold the other half over the filling to create a half-moon shape.
Press the edges with a fork to seal and shape the edges to resemble a crescent moon.
Cut small slits on the top of each pie to allow steam to escape.
Bake:
Place the hand pies on a baking sheet lined with parchment paper.
Brush the tops with the beaten egg wash.
Bake for 20-25 minutes or until golden brown.
Remove from the oven and let cool on a wire rack.
